| Diane's favorite recipe email Diane Farmer's Market Pasta 1 lb. penne or other short pasta 4 ears fresh corn or 1 cup frozen corn kernels, thawed 3-4 ripe tomatoes, seeded & diced 1/3 cup loosely packed fresh basil, shredded or 1 1/2 tsp dried basil 2 Tbsp balsamic vinegar 1/4 cup olive oil 1/2 tsp salt freshly ground pepper to taste 1/2 cup grated parmesan cheese Preparation: In a large pot of boiling water, cook pasta according to package directions. Cut kernels from ears of corn and place in large heat-proof serving bowl. Add tomatoes, basil, vinegar, oil, salt and pepper. Stir until combined and allow to marinate while pasta cooks. Drain pasta and immediately pour over corn salsa; toss until combined. Sprinkle with Parmesan cheese and serve. |
